Vegan Creamy Strawberry Smoothie
2 cups fresh or frozen strawberries
1 1/2 cups coconut water or milk
1/2 cup raw cashews
1/4 cup chopped pitted dates (about 3-4 dates - less if you don't want it as sweet)
1 teaspoon vanilla
pinch sea salt
- Place the coconut water, cashews and dates in a high speed blender and blend on high until smooth.
- Add the vanilla, salt, and strawberries. Blend on high until smooth and creamy.
Migas is a traditional dish in Spanish cuisine using leftover tortillas. This one features asparagus but you could use other veggies like red peppers.
Asparagus Mushroom Frittata
This is a wonderful dish that utilizes Spring's first delights, morel mushrooms and asparagus. Serve for brunch or supper.
