Zucchini Garbanzo Fritters

1/2 cup garbanzo bean flour
1/2 cup water
1 heaping cup shredded zucchini (about 1 medium zucchini)
1 – 2 green onions, chopped fine
1 clove garlic, minced
2 tablespoons parsley, minced
1/2 teaspoon salt
pepper to taste
oil for frying
optional: apple sauce, sour cream or vegan sour cream

  1. Stir the garbanzo bean flour with the water in a large bowl. Let it soak while you prepare the rest of the ingredients.
  2. Mix the zucchini, onion, garlic, parsley, salt and pepper with the soaked garbanzo bean flour.
  3. Heat a skillet over medium heat and add some oil. Spread out heaping tablespoons of batter to about 3 inches in diameter. Cooking for about 2 minutes until nicely browned. Flip and cook the other sides for 2 minutes or until browned. Repeat with remaining batter. Serve fritters with apple sauce and sour cream. Makes about 8 – 10 fritters.
