1/2 cup garbanzo bean flour
1/2 cup water
1 heaping cup shredded zucchini (about 1 medium zucchini)
1 – 2 green onions, chopped fine
1 clove garlic, minced
2 tablespoons parsley, minced
1/2 teaspoon salt
pepper to taste
oil for frying
optional: apple sauce, sour cream or vegan sour cream
- Stir the garbanzo bean flour with the water in a large bowl. Let it soak while you prepare the rest of the ingredients.
- Mix the zucchini, onion, garlic, parsley, salt and pepper with the soaked garbanzo bean flour.
- Heat a skillet over medium heat and add some oil. Spread out heaping tablespoons of batter to about 3 inches in diameter. Cooking for about 2 minutes until nicely browned. Flip and cook the other sides for 2 minutes or until browned. Repeat with remaining batter. Serve fritters with apple sauce and sour cream. Makes about 8 – 10 fritters.
