Pumpkin Pie Steel Cut Oats

1 cup steel cut oats, soaked in water overnight, drained
1 cup dairy or alternative milk
1/2 cup water
2 tablespoons maple syrup, or more to taste
1/8 teaspoon sea salt
1 cup canned pumpkin
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
coconut oil or butter
toasted pecans

  1. Add drained oats, milk, 1/2 cup water, and seasalt to a saucepan and place over medium heat. Bring to a boil, reduce heat, and simmer 25 minutes.
  2. Stir in pumpkin, maple syrup, vanilla extract, and pumpkin spice. Simmer another 10 minutes. Serve with toasted pecans and a dollop of coconut oil or butter.
