1 ½ cups quinoa
salt and pepper
1 cup dried fruit (cranberries, raisins, diced apricot)
1 cup seeds or nuts such as slivered almonds, sunflower seeds, walnuts, pine nuts, pecans, etc. or a combination thereof
¼ cup chopped fresh herbs (basil, parsley, cilantro or mint)
juice of 1 lemon
½ tsp ground ginger
4 tablespoons olive oil
4 cups mixed salad greens
- Boil 3 cups of salted water and add the quinoa. Simmer for 12 to 15 minutes. Remove from heat, cover and let sit for 5 minutes. Drain and cool.
- In a bowl, combine the quinoa with the fruits, nuts and/or seeds and herbs.
- In a small jar, shake together the lemon juice, oil and ginger. Pour over the quinoa and mix well. Serve the quinoa on the salad greens.
