1 cup quinoa
2 teaspoons maple syrup
2 green onions, chopped fine
1 teaspoon curry powder
1/4 teaspoon sea salt
2 tablespoons fresh lemon juice
Freshly ground black pepper to taste
2 tablespoons extra-virgin olive oil
1/2 red pepper, diced small
1 red apple, diced
1/4 cup chopped parsley
1/4 cup toasted, chopped almonds or pecans
- Bring 2 cups water and pinch salt to a boil in a medium saucepan. Stir in quinoa; cover, and reduce heat. Cook for 15 minutes. Fluff quinoa and let cool.
- Whisk together maple syrup, green onion, curry powder, salt, pepper, and lemon juice in a large bowl. Whisking constantly, pour in oil in a slow, steady stream. Add quinoa, red pepper, apple, parsley, and nuts and toss well. Taste and adjust seasoning.
