4 large carrots, peeled
1/3 cup raisins
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
Place raisins in a glass or ceramic bowl, pour boiling water over them, and let stand 10 minutes. Meanwhile, grate carrots into a bowl. Stir in the lime juice, oil, and salt. Drain and add the raisins. Let the salad sit for an hour before serving to allow the flavors to meld.
