Simple Carrot Salad

4 large carrots, peeled
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt

Grate carrots into a bowl. Stir in the lime juice, oil, and salt. Let the salad sit for an hour before serving to allow the flavors to meld.
