Carrot Raisin Salad

Serves 4

4 large carrots, peeled
1/3 cup raisins
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt

Pour hot boiling water over raisins and let stand 10 minutes. Meanwhile, grate carrots into a bowl. Stir in the lime juice, oil, and salt. Drain and add the raisins. Let stand an hour before serving.
