2 medium zucchini or summer squash
¼ cup milk
½ cup grated Parmesan
½ cup seasoned fine bread crumbs (not panko)
- Heat oven to 425°F. Whisk egg and milk in a small bowl.
- Combine parmesan cheese and seasoned bread crumbs in a separate bowl.
- Cut zucchini into 3-inch sticks. Dip sticks in egg mixture and then roll in bread crumb mixture.
- Lightly coat a baking sheet with cooking spray and place zucchini on sheet, spaced apart so they are not touching. Spray lightly with cooking spray. Bake for 30 minutes or until golden brown. Serve immediately with chipotle dipping sauce.
Chipotle Dipping Sauce
1/4 cup mayonnaise
2 tablespoons sour cream
1 teaspoon chipotle in adobo sauce
small squeeze of lime juice
pinch sea salt
Combine all ingredients in a small bowl.
