2 medium zucchini
¼ cup milk
½ cup shredded parmesan
½ cup seasoned bread crumbs
- Heat oven to 425°F. Whisk egg and milk in a small bowl.
- Combine parmesan cheese and seasoned bread crumbs in a separate bowl.
- Cut zucchini into 3-inch sticks. Dip sticks in egg mixture and then roll in bread crumb mixture.
- Lightly coat a baking sheet with cooking spray and place zucchini on sheet, with sides not touching. Spray lightly with cooking spray. Bake for 25 – 30 minutes or until golden brown.
