Strawberry Coconut Popsicles

1 13.5 oz can coconut milk
2 cups chopped strawberries
1 teaspoon vanilla
Stevia or maple syrup, to taste
Big pinch sea salt

Blend the ingredients in a blender. Pour into popsicle molds* and insert the sticks. Freeze overnight or for several hours. To remove from mold, run under hot water to loosen the popsicles. Enjoy immediately or keep frozen in a sealed container until ready to eat. Makes about 8 popsicles.
