1 small pie pumpkin
2 tablespoons extra-virgin olive oil
Sea salt and black pepper
Preheat oven to 400°F. Cut pumpkin in half and scoop out seeds. Drizzle pumpkin with olive oil, and sprinkle with salt and pepper. Place cut side down on a baking sheet. Roast until very tender and easily poked with a knife, about 45 minutes. Serve as a side dish or use for making pumpkin pie.
