No Cook Chia Berry Jam
2 1/2 tablespoons chia seeds
1/2 cup apple juice (fresh is best)
2 tablespoons coconut nectar or your favorite sweetener
1 tablespoon lemon juice
1/4 cup mashed fresh berries (raspberries, strawberries, blueberries or blackberries)
2 tablespoons acai powder (optional)
- Stir the chia seeds and apple juice together in a small bowl.
- Let the mixture sit for 30 minutes, stirring once halfway through.
- Mix in the rest of the ingredients and allow the jam to sit for 30 minutes before serving.
Will keep for 1 week, refrigerated in a sealed glass jar.
Feel free to make this jam thicker or thinner by adjusting the amount of chia seeds.
