No Cook Chia Berry Jam

2 1/2 tablespoons chia seeds
1/2 cup apple juice (fresh is best)
2 tablespoons coconut nectar or your favorite sweetener
1 tablespoon lemon juice
1/4 cup mashed fresh berries (raspberries, strawberries, blueberries or blackberries)
2 tablespoons acai powder (optional)

  1. Stir the chia seeds and apple juice together in a small bowl.
  2. Let the mixture sit for 30 minutes, stirring once halfway through. 
  3. Mix in the rest of the ingredients and allow the jam to sit for 30 minutes before serving. 

Will keep for 1 week, refrigerated in a sealed glass jar.

Feel free to make this jam thicker or thinner by adjusting the amount of chia seeds.
