1 medium cucumber, sliced
1 heaping cup cantaloupe melon, sliced
1/4 cup thinly sliced red onion
fresh mint leaves, chopped
white wine vinegar to taste, start with 1 tablespoon
olive oil, start with 1 tablespoon
sea salt to taste
Toss all ingredients together and taste. Add more salt or vinegar, as needed. Serve immediately. Serves 2.
