2 medium zucchinis
1 cup pizza sauce or marinara sauce
4 oz. soft goat cheese
1/2 cup grated Parmesan or Asiago
Optional: chopped onion, chopped roasted garlic, sliced olives, canned mushrooms
- Heat oven to 375°F.
- Cut zucchinis in half lengthwise. Carefully scoop out the soft seedy centers and set aside for cooking in another dish or composting.
- Spread zucchini halves with pizza sauce. Dollop the goat cheese among the 4 halves. Sprinkle with the Parmesan cheese and dot with pepperoni slices and optional toppings.
- Bake for 20 minutes. Turn oven to high broil and broil zucchinis just a few minutes to brown the tops. Serve immediately.
