Grilled Portabella Veggie Burgers

2 large portabella mushrooms
2 tablespoons olive oil
2 tablespoons apple cider vinegar
seasoned salt and pepper
2 burger buns
optional: 2 slices cheese
tomato, lettuce, onion slices

  1. Whisk the oil, vinegar, and seasoned salt together in a small bowl.
  2. Detach the mushroom stems and discard. Gently wipe off the tops of the mushrooms. Place mushrooms in a pie plate and brush both sides with the oil/vinegar mixture. Let sit for 15 minutes.
  3. Heat a grill to medium. Place the mushrooms top side down and grill for about 3 minutes or until grill marked. Flip and cook the other sides another 2-3 minutes. Place cheese slices on top of the mushroom caps, if desired, during the last minute of cooking.
  4. Assemble the burgers with your desired toppings and enjoy while hot.
