Fresh Tomato Sauce

6 tomatoes, chopped
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
Pinch sugar
Salt and pepper to taste

Saute onion in olive oil over medium heat until softened, about 5 minutes. Add garlic and cook 1 minute more. Add tomatoes, salt and pepper. Bring to a boil, reduce heat to a simmer, and cook for 15 minutes. Add a pinch of sugar if sauce seems too tart and adjust salt and pepper.

Optional ingredients: dried or fresh chopped basil, thyme, oregano, or parsley, 2 tablespoons white or red wine, mushrooms.
