1 fennel bulb, halved lengthwise, sliced thin
1 tart apple, sliced thin
1 head Boston lettuce, torn to bite-size pieces
juice from 1 lemon
1 tablespoon maple syrup
1/4 teaspoon salt
black pepper to taste
2 tablespoons extra virgin olive oil
Toss fennel, parsley, apple and lettuce in a large bowl.
Whisk together lemon juice, maple syrup, salt and pepper in a small bowl, then whisk in oils until blended. Toss with fennel mixture and serve immediately.
