Spiced Winter Squash Bread

1 cup cooked, mashed winter squash such as butternut or acorn squash
2 eggs
1/2 cup butter, melted
1/4 cup water
1 cup cane sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cardamom
½ cup chopped pecans, optional

  1. Heat oven to 350°F. Grease a loaf pan.
  2. In a large bowl, mix together the butternut squash puree, eggs, butter, water, vanilla, and sugars until thoroughly combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg and cardamom.Stir the dry ingredients and nuts if using into the butternut squash mixture. Mix just until incorporated; Be sure not to over mix.
  3. Pour into the loaf pan. Bake for 55-60 minutes or until a cake tester inserted into the center of the loaf comes out clean. Let cool for 5 minutes, then turn out and cool completely on a wire rack.
