1 medium cucumber, peeled (if desired,) cubed
2 cups cubed seedless watermelon
1/4 cup fresh chopped parsley
1-2 green onions, sliced
2-3 teaspoons white wine vinegar
2-3 teaspoons extra virgin olive oil
sea salt to taste
Toss all ingredients together. Taste and add more vinegar or salt if needed. Serve immediately.
