Chocolate Chip Zucchini Cookies

2 sticks butter, softened
1 cup cane sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
4 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
½  teaspoon salt
2 cups grated zucchini
2 cups semi-sweet chocolate chips
1 cup walnuts, chopped (optional)

  1. Preheat oven to 375°F . Spray cookie sheets with cooking spray or line with parchment paper. 
  2. Cream butter and sugar together in a large mixing bowl until light and fluffy. Add the eggs and vanilla and mix well. Add flour, baking soda, cinnamon, and salt into the butter mixture and mix well. Stir in the zucchini. Fold in walnuts and chocolate chips.
  3. Drop by teaspoonfuls, spacing the cookies 2 inches apart, onto the cookie sheets. Bake for 12 minutes, or until golden. Do not overbake. Let sit for 2 to 3 minutes, then remove and place on wire racks to cool completely.
