Chocolate Chip Zucchini Cookies

2 sticks butter, softened
1 cup cane sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
4 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 sea teaspoon salt
2 cups grated zucchini (do not drain)
2 cups semi-sweet chocolate chips
1 cup walnuts, chopped (optional)

  1. Preheat oven to 375°F. Spray cookie sheets with cooking spray or line with parchment paper. 
  2. Cream butter and sugar together in a large mixing bowl until light and fluffy. Add the eggs and vanilla and mix well. Mix the dry ingredients together in a separate bowl and add to the butter mixture; mix well. Stir in the zucchini. Fold in walnuts and chocolate chips.
  3. Drop by teaspoonfuls, spacing the cookies 2 inches apart, onto the cookie sheets. Bake for 12 minutes, or until golden. Do not overbake. Let sit for 2 to 3 minutes, then remove and place on wire racks to cool completely.
