Chicken Bulgogi

1/3 cup tamari
1 tablespoon red chili paste
1 teaspoon onion powder
1 teaspoon dried ginger
1 teaspoon garlic powder
1 tablespoon maple syrup
1 tablespoon mirin
1 tablespoon rice vinegar
2 teaspoons toasted sesame oil
freshly ground black pepper
1 tablespoon sesame seeds
6 boneless, skinless chicken thighs

  1. Whisk together all ingredients except chicken in a bowl. Add the chicken and turn to coat thoroughly. Let marinate for an hour.
  2. Heat a grill to medium. Grill thighs until well-seared and grill marked, about 4-5 minutes. Turn and cook on the other side until fully cooked through, another 3-4 minutes. Serve with rice and kimchi.
