Celeriac Slaw

2 bulbs celeriac, peeled, shredded
2 stalks celery, thinly sliced
1/2 cup plain yogurt
2 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice
Sea salt and freshly ground black pepper
1 teaspoon dried tarragon
1/2 teaspoon maple syrup

Whisk together yogurt, olive oil, lemon juice, salt, pepper, tarragon, and maple syrup. Toss with celeriac and celery. Refrigerate for 30 minutes to let the flavors meld.
