Apple Cider Kanten

Kanten is a Japanese dessert that is similar to Jell-O brand gelatin. It’s made with agar-agar, a gelatinous substance derived from seaweed. Agar agar is an excellent vegan option for gelatin-type desserts. It is neutral in taste and you can use it with any fruit juice.

4 cups apple cider
4 tablespoons agar agar flakes (we used Eden brand, available at Oryana)
Optional: 1-2 tablespoons maple syrup
Cinnamon for sprinkling

  1. Add the cider, optional maple syrup, and agar agar flakes to a saucepan. Bring to a simmer, stirring occasionally, and let cook for about 5 minutes or until the flakes are completely dissolved.
  2. Remove from heat. Lightly grease an 8 x 8 pan with coconut oil and pour the liquid into the pan. Let cool on the counter for about 15 minutes, then refrigerate until firm.
