1 tablespoon olive oil
1 large onion, chopped
4 cloves garlic, chopped
1 15 oz. can tomato sauce
2 15 oz can fire roasted diced tomatoes
4 15 oz. cans black beans, rinsed
1 cup veggie broth
1 tablespoon chipotle in adobo sauce
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons oregano
sea salt to taste
Heat oil in a large pot over medium heat. Saute the onion and garlic until onion is translucent, about 5 minutes. Add the remaining ingredients, bring to a boil, reduce heat, and simmer for 20 minutes.
Note: You can adjust the spices to your liking. Chipotle in adobo sauce is very spicy so you might want to start by adding a teaspoon and then go from there.
