6 cups of cubed, seedless watermelon
2 tablespoons extra virgin olive oil
1-2 limes, juiced (depending on how big/juicy they are)
1/2 tsp salt
black pepper, to taste
1/2 cup fresh mint leaves, coarsely chopped
1/2 heaping cup crumbled feta cheese
- Whisk together the olive oil, lime juice, salt and pepper in a small bowl.
- Place watermelon in a large bowl along with the chopped mint leaves. Drizzle over the dressing and gently toss. Add the feta cheese and gently toss again. Serve immediately. Serves 4 people.
