Roasted Broccoli

1 bunch broccoli
1-2 tablespoons olive oil
sea salt to taste
optional: grated parmesan cheese

  1. Heat oven to 450°F. Cut off the broccoli stalks and save for another use. (Good peeled and cut up raw for crudite or grated for slaw.) Cut the broccoli heads into medium florets.
  2. Toss the broccoli with olive oil and sea salt on a large roasting pan. Spread out in a single layer.
  3. Roast for 15 minutes. Remove the broccoli from the oven, sprinkle with the Parmesan and return to oven for another 5 minutes. Serve immediately.
