Prosciutto Asparagus Spears

1 bunch asparagus, ends trimmed
1 tablespoon olive oil
Coarse salt
Coarsely ground black pepper
18 thin slices prosciutto, cut in half lengthwise

  1. Heat the broiler on high and arrange rack about 6 inches below the broiler.
  2. Place asparagus spears on a baking sheet and drizzle with the olive oil. Using your hands, toss until the spears are evenly coated with the oil. Season with salt and pepper. Transfer spears to a plate.
  3. Starting under the tip of the asparagus stalk, wrap each spear with 1 slice of prosciutto in a spiral toward the cut end, overlapping the seams of the prosciutto. Place on the baking sheet. Repeat with the remaining asparagus, leaving space between each spear. The spears should not touch or they won’t get crispy.
  4. Broil for 3 minutes and remove the pan from the oven. Flip the asparagus spears over and return pan to the oven. Continue broiling until the prosciutto is crispy and browned, about 3 more minutes. Serve immediately.
