1 package soba noodles
½ teaspoon dried garlic
1 teaspoon dried ginger
1/2 cup creamy peanut butter
1/4 cup tamari
2 teaspoons toasted sesame oil
1 tablespoon maple syrup
1 tablespoon seasoned rice vinegar
hot sauce, to taste
1 medium carrot, peeled, grated
4 green onions, sliced
1 red pepper, diced small
1/2 cup chopped roasted peanuts
- Cook the soba noodles until al dente according to package directions. Drain and rinse the noodles under cold water to stop cooking.
- For the peanut dressing: Whisk together the peanut butter, garlic, ginger, tamari, sesame oil, maple syrup, vinegar, and hot sauce in a large bowl until smooth. Add the noodles and veggies and toss to coat. Serve garnished with the chopped roasted peanuts.
