Paleo Zucchini Brownies

Adapted from

1 cup almond butter
¼ cup cocoa
1 cup shredded zucchini
1/3 cup honey, heated
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup dark chocolate chips.

  1. Heat oven to 350°F. Combine almond butter and honey in a bowl. Beat in the egg and vanilla. Stir in zucchini. Sift in the cocoa, cinnamon, and baking soda and mix well. Stir in chocolate chips.
  2. Pour into a greased 9 x 9 baking pan and bake for 30-35 minutes or until a toothpick comes out clean.
