Mushroom Black Bean Burgers

1 egg
2 tablespoons onion, minced
¼ lb mushrooms, chopped
2 tablespoons cilantro, minced
3 cloves garlic, minced
1 teaspoon ground cumin
½ teaspoon sea salt
¼  teaspoon black pepper
1 15-oz can black beans, rinsed, drained
½ cup panko bread crumbs
1 tablespoon vegetable oil

  1. Place egg, onion, mushroom, cilantro, garlic, and cumin in a food processor and pulse until mushrooms are finely chopped.
  2. Mash black beans.  Mix together beans, mushroom mixture, salt, pepper and bread crumbs.  Form into four patties and refrigerate 30 minutes. (Can be refrigerated overnight).  
  3. Brush oil on burgers and grill 2 to 3 minutes on each side. Serve on a whole wheat bun topped with lettuce and a slice of tomato fresh from the garden.
