Massaged Kale Salad

1 bunch kale (any type), stalks removed, leaves thinly sliced
1 lemon, juiced
¼ cup extra virgin olive oil, plus extra for drizzling
Sea salt to taste
1 tablespoon honey
Freshly ground black pepper
1 mango, diced small, about 1 cup, or ripe peaches or nectarines
¼ cup toasted plain or spicy pumpkin seeds
¼ cup raisins or dried cherries

  1. In large serving bowl, add the kale, half the lemon juice, a drizzle of olive oil and salt to taste. Massage with your hands until the kale starts to soften and wilt, 2 to 3 minutes. Set aside.
  2. In a small bowl, whisk remaining lemon juice with the honey and freshly ground pepper. Stream in the ¼ cup of olive oil while whisking briskly until well blended. Pour the dressing over the kale and add the mango, pumpkin seeds, and raisins and toss to combine.
