Kale Apple Salad

6 cups kale, chopped
2 apples, chopped
1/4 cup currants 
1/4 cup toasted, chopped hazelnuts
1/3 cup feta cheese
Dressing:
1 tablespoon maple syrup
2 tablespoons olive oil 
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
sea salt and black pepper to taste

Whisk together the dressing ingredients in a large bowl. Add the kale, apples, currants, and hazelnuts. Toss to coat. Let sit for about 30 minutes to let the flavors meld. Serve sprinkled with feta cheese.
