1 cup fresh parsley, chopped
1/2 cup fresh mint leaves, chopped
2 tablespoons extra virgin olive oil or hemp oil
3-4 large tomatoes, diced
1 cup hemp seed
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon sea salt or to taste
Toss all ingredients together in a bowl. Taste and add more lemon juice or salt if needed.
