Heirloom Tomato Salad

If there is a salad heaven, it happens in the summer! Farmer’s markets, roadside stands, and Oryana’s produce sections are bursting with fresh, local produce that is begging to be assembled in a salad. This is just one simple, easy way to enjoy heirloom tomatoes. Crusty bread always makes the perfect accompaniment to fresh tomato salads.

1-2 heirloom tomatoes
Feta cheese chunks – fresh mozzarella would be great too
1 shallot, sliced into thin rings – Vidalia onion would also be great
Fresh herbs like basil, mint, parsley, or fresh microgreens
Good quality balsamic vinegar
Extra virgin olive oil
Salt & pepper

Slice the tomatoes and place 3-4 slices on a salad plate. Add some sliced onion, cheese chunks, and herbs/microgreens. Drizzle with vinegar & oil and sprinkle with salt and pepper. Eat right away!
