It’s an extra step to pre-cook the potatoes but baby potatoes cook up fast and it’s worth the effort. Serve these with grilled chicken or steak and a salad.
1 1/2 – 2 lbs baby or new potatoes
juice from 1/2 a lemon
1 heaping tablespoon mayonnaise
1/2 teaspoon mustard powder
salt and black pepper
- Boil the potatoes in salted water until just tender. Don’t over cook. They should be soft but not mushy. Drain & let cool.
- Add the lemon juice, mayo, mustard, salt & pepper to a large bowl and mix together.
- Add the potatoes to the bowl and toss the potatoes in dressing. Thread potatoes onto skewers.
- Heat a grill to medium and grill the potatoes until lightly browned. Turn and grill the other sides until lightly browned and grill marked. Serve immediately with any leftover dressing drizzled over the top.
