German Apple Pancake

2 large tart cooking apples
1/4 cup cane sugar
1/2 teaspoon cinnamon
1/2 cup butter (1 stick)
1 cup all-purpose flour
2 teaspoons cane sugar
1/4 teaspoon sea salt
2 large eggs
1/2 cup milk
1 teaspoon vanilla

  1. Preheat oven to 375°F degrees. Wash, core and slice the apples. Mix ¼ cup sugar with cinnamon. Sprinkle half the cinnamon sugar over sliced apples and toss to coat.
  2. Melt the butter in a 9” or 10” oven-proof skillet (cast iron works best). Saute the apples until they are just tender, about 5 minutes. Remove pan from heat and set aside while you make the batter.
  3. Sift together the flour, 2 teaspoons sugar and salt. Whisk the eggs, milk and vanilla in a separate larger bowl.  Gradually add the flour mixture to the wet mixture and beat until smooth.
  4. Pour the batter over the sautéed apples. Sprinkle the top with the remaining cinnamon sugar and bake for 20 minutes or until puffed and golden brown.
