Faux Potato Salad

You will be pleasantly surprised at how delicious this is. You will not miss the potatoes, guaranteed! Cauliflower is so versatile it readily absorbs flavors and seasonings. Perfect for keto or paleo diets.

1 small head cauliflower, chopped into 1/2 inch pieces
1/4 cup mayonnaise
1/2 teaspoon cider vinegar
Salt and black pepper, to taste
2 tablespoons yellow mustard
1 stalk celery, chopped
1/4 cup sweet onion, chopped
2 hard-boiled eggs, chopped
1 tablespoon chopped fresh chives

  1. Steam or boil the cauliflower until fork tender, about 10 minutes. Rinse in cool water and drain well.
  2. Whisk the dressing ingredients together in a large bowl.
  3. Add the cauliflower to the bowl and stir, then fold in the eggs and chives. Taste and adjust seasonings as needed. Chill for 30 minutes before serving.
