Creamed Swiss Chard

2 tablespoons butter
2 cloves garlic
1/4 cup chopped local onion
1/4 cup flour
1 cup Shetler’s milk
sea salt and white pepper
1 large bunch local swiss chard, stems removed and reserved for another use, leaves chopped

Melt butter in a large saucepan over medium-low heat. Add onion and garlic and cook until onion is softened, about 3 minutes. Stir in flour and cook for 1 minute. Raise heat to medium. Whisk in milk and cook, stirring constantly, until reduced by about half. Add the chard. You may have to do this in batches as the chard cooks down. Add salt and pepper and cook about 4 – 5 minutes. Serve immediately.
