Coconut Blueberry Pudding

1 1/2 cups blueberries
¾ cup coconut milk
¼ cup coconut oil
1 ripe banana
1 tablespoon chia seeds
1 teaspoon vanilla
pinch sea salt

  1. Heat a saucepan over low heat and add coconut milk and oil. Stir until oil is melted.
  2. Pour into a blender and add the banana, blueberry, chia seeds, sea salt, and vanilla. Blend until smooth.
  3. Pour into a bowl and refrigerate until chilled and firm.
