Citrus Avocado Salad

I sumo, orange, or tangerine, sliced
1 ripe avocado, sliced
1/4 cup pine nuts, lightly toasted*
1/4 cup crumbled feta cheese
red onion slices
mixed baby greens
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon water
1/2 teaspoon fine citrus zest
1/2 teaspoon dijon mustard
1 teaspoon honey or maple syrup
salt and black pepper, to taste

  1. Arrange a handful of greens on two plates. Place sumo, avocado, and red onion slices over the greens. Sprinkle with the pine nuts and feta cheese.
  2. Whisk the dressing ingredients together and drizzle over the salads. Serve immediately.

*To toast pine nuts, scatter on a baking sheet and toast at 350°F for 5-8 minutes, until light golden brown.
