Chia Pudding

1/4 cup chia seeds
1 cup coconut or almond milk (or milk of your choice)
2 tablespoons maple syrup
1/2 tsp. vanilla extract 
Pinch sea salt

Stir all the ingredients together in a small bowl. Let sit in the refrigerator, covered, for a couple hours or overnight. Enjoy with fresh fruit, nuts, granola, etc. Makes 2 servings.
