Build Your Own Veggie Bowl

Use any veggies you have on hand to make your veggie bowl. Start with a grain base (brown rice, quinoa, farro, tabouleh, etc.) Include a protein such as chicken, fish, Greek yogurt, or chickpeas or other legume. Prep your veggies in a variety of ways but also include some raw. We roasted, braised, and steamed our way to veggie deliciousness. Add toasted nuts or seeds if you like. Make a quick tahini sauce or red pepper sauce for a flavorful topping.

Here is what we used to make our bowl:

  • cauliflower, roasted in olive oil, sea salt, and turmeric
  • cherry tomatoes
  • sliced cucumers
  • steamed, sliced chiogga beet
  • quick pickled red onion
  • parsley
  • red kale braised in veggie broth
  • chickpeas
  • roasted red pepper sauce
  • quinoa
