Fast Pickled Red Onion
1 medium red onion
1 tablespoon maple syrup
1/2 teaspoon sea salt
3/4 cup white vinegar or apple cider vinegar
Thinly slice the red onion and stuff into a pint size glass jar. Add the vinegar, salt, and maple syrup. Seal and shake the jar a bit to distribute the salt and maple syrup. Let sit at room temperature for about a half hour before enjoying. Keep refrigerated.
