Red Pepper Dressing

2 red peppers, roasted*
1 large clove garlic, chopped
1/4 cup sweet onion or shallot, chopped
2 tablespoons white wine vinegar
1/3 cup vegetable broth
2 tablespoons olive oil
1/2 teaspoon sea salt

  1. Add all ingredients to a blender and blend until smooth. Taste and adjust salt and/or vinegar as needed.

*Use red peppers from a jar or roast your own.
