Broccoli Kohlrabi Slaw

This is a great recipe to use up broccoli stalks. After you use the florets, save your broccoli stalks in a produce bag and they will keep for awhile until you have several to use for this salad.

2-3 broccoli stalks, peeled
2-3 kohlrabis, peeled
2 tablespoons, finely chopped sweet onion
2 tablespoons mayonnaise
2 tablespoons cider vinegar
1 tablespoon olive oil
1/2 teaspoon sea salt or to taste
black pepper to taste
1/2 teaspoon maple syrup
1/2 teaspoon chia seeds
1/3 cup sliced almonds, lightly toasted*

Grate the broccoli stalks and kohlrabi in a food processor or with a box grater. Add the slaw to a bowl and add in the remaining ingredients. Toss to coat well. Taste and adjust as needed, adding more vinegar, salt or a tad more maple syrup to taste. Serve sprinkled with toasted almonds. Serves 3-4.

*To toast the sliced almonds, spread on a sheet pan and bake in a toaster oven or regular oven at 350°F for about 8 minutes or until lightly browned.
