Banana Peanut Butter Chocolate Bread

3 ripe bananas
1/2 cup smooth peanut butter
1 egg
1 teaspoon vanilla extract
1 cup cane sugar
2 cups unbleached flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon sea salt
4 oz bitter sweet chocolate, chopped

  1. Heat oven to 350 F. Grease a 9×5 loaf pan. 
  2. In a large bowl, mash the bananas well with a fork or potato masher. Mix in the peanut butter until smooth. Whisk in the egg and vanilla.
  3. In a separate bowl, combine all the dry ingredients including the chopped chocolate. Pour the dry ingredients into the wet, and mix just until combined. Pour into the prepared pan. Bake for 60-70 minutes or until a toothpick inserted comes out clean.  Let cool for 10 minutes before removing from pan. Let bread cool completely on a wire rack.
