Banana Chocolate Chip Muffins

3 ripe bananas
3/4 cup packed brown sugar
1 egg
1/2 cup butter (1 stick), melted
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 cup semisweet chocolate chips

  1. Heat oven to 350°F. Grease a standard 12 cup muffin pan or line with paper cups.
  2. Using the paddle attachment, mash the bananas in the bowl of a stand mixer. Or mash by hand using a fork in a bowl. Add in the sugar and beat well. Add egg, butter, and vanilla and beat again until smooth.
  3. Mix together the flour, baking powder, and salt in another bowl and then add to the wet ingredients. Mix just until combined. Add the chocolate chips and briefly mix in.
  4. Scoop dough evenly into prepared muffin cups. Bake for 22 – 25 minutes or until the tops spring back when lightly touched. Cool in the pan a few minutes, then transfer to a wire rack to cool completely.
