Braised Chicken with Vegetables

1 tablespoon extra-virgin olive oil
4 skinless chicken thighs
Sea salt and ground pepper
3 slices bacon, chopped
1 onion, cut in large chunks
1 large russet potato, cubed
4 carrots, sliced thick
¼ head cabbage, cut into 1-inch pieces
2 cups chicken broth
1 teaspoon thyme
2 tablespoons Dijon mustard

Heat oven to 375 degrees. In a large cast iron pan, heat oil over medium-high. Season chicken with salt and pepper and cook until browned on both sides. Remove chicken to a plate. Reduce heat to medium and add bacon and cook about 5 minutes. Add onion, potato, and carrots. Sprinkle with salt and pepper and place in oven. Roast for 20 minutes. Remove pan from oven and stir in cabbage, broth, thyme, and mustard. Add chicken, place pan in oven, and bake another 25 - 30 minutes, stirring vegetables halfway through.
