Whole Wheat Chapatis

1 cup whole wheat bread flour
1 cup all-purpose flour
1 teaspoon sea salt
1 tablespoon olive oil
1 cup room temperature water

  1. Mix the flours and salt together in a bowl. Add the water and oil and stir until it comes together in a rough ball. Cover the bowl with plastic wrap and let sit for 1 hour.
  2. Remove the dough from bowl onto a floured surface. Knead the dough until smooth. Divide into 8 pieces. Roll the pieces into balls.
  3. Roll the small balls into 8 inch circles using a rolling pin, lightly flouring the surface to keep the dough from sticking.
  4. Heat a heavy skillet over medium heat until hot. (Use 2 skillets to cook the chapatis faster.) Cook on one side until it starts to brown and dark spots form and it puffs up, about 1 minute or so. Flip and cook the other side another minute. Keep the chapatis warm by covering with a cloth napkin or dish towel.
