6 cups seedless watermelon, cut into chunks
Juice from 1 lime
2 – 4 tablespoons sugar or maple syrup, depending on how sweet you like it
Blend the watermelon, lime juice, and sweetener in a blender until you have a smooth mixture. Taste and adjust sweetener if needed. Pour into 8 popsicle molds and freeze at least 4 hours or overnight. To unmold the popsicles, it’s helpful to dip the molds into a large bowl filled with hot water, to loosen them and make them easier to dislodge.
