Turkey Scallion Nuggets with Tamari Maple Glaze

1 lb ground turkey
1/3 cup breadcrumbs
1/3 cup fresh cilantro, chopped
3 scallions, finely chopped
1 egg
1 tablespoon tamari
1 teaspoon toasted sesame oil
black pepper
coconut oil for frying

Glaze
1/4 cup tamari
1/4 maple syrup
1/4 cup water
1/4 cup mirin
1/4 teaspoon dry ginger

  1. Whisk the glaze ingredients together in a small saucepan and bring to a boil. Reduce heat to medium and simmer until reduced and thickened, about 15 minutes.
  2. Combine the turkey, breadcrumbs, cilantro, scallions, egg, tamari, sesame oil and several grinds of black pepper in a bowl. Form heaping tablespoons of meat mixture into football shapes. 
  3. Melt 1 – 2 tablespoons coconut oil over medium heat in a heavy skillet and fry the nuggets, turning to brown all sides, until cooked through, about 15 minutes. Serve drizzled with glaze.
