1 pound bulk breakfast sausage
3 tablespoons butter
5 cups diced cooked potatoes
1 onion, diced small
1 green pepper, diced small
2 tablespoons fresh chopped herbs such as chives, parsley, thyme, tarragon
Sea salt and black pepper to taste
In a large heavy skillet over medium heat, cook the sausage, breaking it up into small pieces, until no longer pink. Drain all but 1 tablespoon fat and set meat aside. Add the butter to the skillet and cook the potatoes, onion, and pepper, until the potatoes are lightly browned and onion and pepper are soft. Stir the the sausage back in and add the herbs, salt, and pepper and heat through.
